Since Ethel puts that s#%t on everything, we thought we’d share a Frank’s Red Hot recipe featuring our friends the oyster and vodka.
If you have some SKYY Citrus Vodka, some cocktail sauce, Frank’s Red Hot Sauce and an oyster, you can make this spicy oyster shooter.
What do you like to put that s#%t on?
We’re just going to come up and tell you right up front that these here are not your every day recipes. Nor are they terribly low on calories. But we can assure you that they’re all 100% delicious. They’ve not been written and sent in by any of our celebrity chefs, but they’ve been given to us from our mothers. What could be better than that?
Oyster Stew
Melt butter in top of double boiler and cook onions and garlic until transparent. Add milk, cream, salt & pepper and heat over boiling water until steaming. Add oysters and continue cooking until oysters float. Add curry powder to taste. Serve with fresh crusty rolls.
Lobster Newburg
Melt butter, add flour, salt, cayenne and mix well. Add milk gradually, bring to boil and stir constantly. Add lobster just before serving, add beaten egg yolks and flavouring. Serve over toast or in party shells. Garnish with fresh parsley &Â thin strips of pimento.
Clam Fritters
Cook onions in butter until translucent. Blend in flour and season with salt and pepper (to taste). Slowly add one cup of milk and bring the mixture to a boil, stirring until it’s a smooth, thick white sauce. Add clams and remove from heat. When it’s cool enough to handle with your hands, take one tablespoon of the mixture at a time and drop it in a dish of beaten egg whites and then in a dish of crushed cracker crumbs.
They should form little patties (this is such a messy job!) that you will then fry in a mixture of butter and whatever other oil you like to fry in. They’re done when they’re nice and golden brown. Best served with mashed potatoes corn on the cob.
This year, there are three different ticket options for the PEI Shellfish Festival, ranging from $12 to $129 (what’s one extra digit when it comes to seeing Curtis Stone in real life, though, wha?)
Here’s how it’s going to work this year for all of you interested in coming to the Prince Edward Island International Shellfish Festival (PLEASE NOTE all tickets will also be subject to tax):
Thursday, September 15, 5:00pm–11:00pm (Reception: 5:00pm–6:00pm; Dinner: 6:00pm-9:00pm; Kitchen Party: 9:00pm–11:00pm)
Cost: General Seating = $129.00 plus taxes
For $129, you’ll spend an evening feasting on a 4-course meal hosted by Celebrity Chef Curtis Stone and prepared by the Culinary Institute of Canada. Stone will create and demo a signature dish for the event. The evening ends the best way we know how—A Kitchen Party featuring song, fiddles, and dancing.
We did sneak a peek at the menu and it looks amazing. Can’t say it’s set in stone (pun intended), but we did see something about lobster lollipops!
These tickets are good for two shows on Friday, September 16, at 9:00am–10:30am & 12:00pm–2:30pm

Show us a shellfish lover who doesn’t love a warm, cheesy seafood bubbly bake and we’ll show you a…well…something just as out-of-the-ordinary (we’re actually so surprised that a shellfish lover wouldn’t love this recipe that it caught us off-guard!).
But you don’t have to sit at a restaurant to enjoy this comforting dish. You can bake it up right at home with our delicious Scallop and Lobster Bake recipe.
Note: Any type of seafood could be substituted for the scallops if you like, but it’s our favourite choice for this dish.
Scallop and Lobster Bake
Ingredients:

Method:
Separate the scallops, rinse and pat dry with paper towels. Sprinkle with salt. Melt the butter and fry vegetables in it for 10 minutes. Prepare your cheesy white sauce. If you don’t know how to make a cheese sauce, ask your mother or head on over to Google/YouTube/etc. (we like this video courtesy of Gordon Ramsay).
Grease a 1 1/2-quart casserole dish. Mix together scallops, lobster, vegetables, and sauce before placing in the casserole dish. Top with one cup of soft buttered bread crumbs. Bake at 350 for 35 minutes.

Foot Network fans will see a familiar face at the Historic Charlottetown Waterfront in September when Canadian Living Food Director, Annabelle Waugh, visits the 2011 Prince Edward Island International Shellfish Festival with the Canadian Living Test Kitchen.

There are lots of squeals of excitement coming from the PEI Shellfish Festival office today as we’re finally able to announce that the cooking wonder from down under, Curtis Stone, is confirmed to be the 2011 Festival’s celebrity chef this year.
We have a bigger entertainment budget this year and with a celebrity of Stone’s calibre, we expect ticket sales to go through the roof!
